Quinoa and Coconut Porridge with Seasonal Fruits

 

 

 

Quinoa Porridge

2 cup quinoa, rinsed

2 cups water

2 cups coconut milk (approximately)

1 tsp ground cinnamon

1 tsp vanilla bean paste

1/4 cup maple syrup, plus some to drizzle for serving

Coconut flakes, toasted to serve
Pistachios, chopped to serve

Lots of fresh seasonal fruit and berries to top!!!

 

METHOD

  1. Put water, quinoa, cinnamon and quinoa in a saucepan, bring to boil then cover, turn heat to low for about 6-8 minutes, or until almost all of the water has been absorbed. At this point, your quinoa should be par cooked. 

  2. Add in 1 cup of the coconut milk, bring to a simmer, cover, then on very low heat, let the quinoa absorb the milk, should take about 4-6 minutes, watch it doesn't burn though. Remove from heat and add in a little more coconut milk if necessary to make it your desired consistency. 

  3. Serve in bowl with fruit, coconut flakes, pistachios and drizzle some maple syrup on top!

 

 

NOTE: You can also substitute the coconut milk for almond milk to make it a little more healthy!
